Prepare components

    Shred and shred

    Grate or shred the mature cheddar and mozzarella and combine in a small bowl so the cheeses mix evenly. Having two cheeses helps with flavor and melt — cheddar for bite, mozzarella for stretch.

    Thinly shred or finely slice the cabbage. If you prefer it softer, toss the shredded cabbage with a pinch of salt and let it sit 5 minutes, then squeeze out excess moisture with a clean towel.

    If using smoked turkey bacon that is not hot, warm it in a skillet over medium heat for 1–2 minutes per side until heated and slightly crisp. Pat on paper towel to remove excess fat.

Assemble sandwich

    Lay the two slices of sourdough on a cutting board. Spread about 1 teaspoon of softened butter on the outside face of each slice (these will contact the skillet).

    On the inside face of one slice, spread the Dijon mustard evenly if using. Sprinkle half of the cheese mixture over that slice, then add the shredded cabbage in an even layer, followed by the smoked turkey bacon slices. Top with the remaining cheese, then place the other slice of bread on top, buttered-side-out.

    Press the sandwich gently to compact the layers so the cheeses contact both slices of bread.

Cook and finish

    Heat a heavy skillet or nonstick pan over medium-low to medium heat. Add 1 teaspoon neutral oil and let it shimmer — this helps the butter not burn and gives an even browning.

    Place the assembled sandwich in the skillet. Cook for 3–4 minutes until the bottom is golden brown. Use a spatula to press down slightly to ensure contact.

    Flip the sandwich carefully. If the cheese isn’t melting to your liking, add 1–2 tablespoons of water to the pan off to the side (not on the sandwich) and immediately cover the skillet with a lid for 30–60 seconds to create steam which promotes melting. Remove the lid and continue cooking another 1–2 minutes until the other side is golden and cheese is melted.

    When done, transfer to a cutting board and let rest 1 minute. Slice in half on a diagonal. Season with freshly ground black pepper and add pickled jalapeño slices inside or on the side if desired.
