Toast the corn
Heat a large heavy skillet or cast-iron pan over medium-high heat. Add vegetable oil and 1 tablespoon of butter. When shimmering, add the corn kernels in an even layer. Let them sit undisturbed for 2–3 minutes to develop color, then stir or shake the pan to char other sides. Continue cooking, stirring occasionally, until most kernels have light char spots, about 6–8 minutes total.

Season the cooked corn: reduce heat to medium, add remaining 1 tablespoon butter, smoked paprika, ground cumin, chipotle powder, sea salt, and black pepper. Toss to coat and warm through for 1–2 minutes. Taste and adjust salt or heat as desired. Remove from heat and squeeze 1–2 lime wedges over the corn; toss lightly.

Make the spread
In a medium bowl, combine softened cream cheese, crumbled cotija (reserve 2 tablespoons for garnish), sour cream, lime juice, grated garlic, minced chipotle (if using), chopped cilantro, and 1/4 tsp salt. Use a spatula or electric mixer on low to blend until smooth and spreadable. Taste and adjust lime, salt, or heat. If too thick, add 1 teaspoon water or more sour cream to reach a spreadable consistency.

Toast the sourdough
Preheat oven broiler or a skillet. Brush both sides of each sourdough slice lightly with olive oil or melted butter. For broiler: place slices on a baking sheet and broil 2–3 inches from the element until golden and crisp, about 1–2 minutes per side—watch carefully. For skillet: toast over medium heat 2–3 minutes per side until golden. Remove and keep warm.

Assemble base layer: spread about 1–1.5 tablespoons of the cotija cream cheese spread on each toasted sourdough slice, leaving a small border.

Top with corn and cheddar: spoon about 3–4 tablespoons of the spiced charred corn onto each spread-covered slice (evenly distribute). Sprinkle about 2 tablespoons grated Cabot cheddar over the corn on each slice.

Melt cheese (optional): place assembled toasts under broiler for 30–60 seconds just until cheddar softens and begins to melt. Remove immediately to avoid burning.
Garnish & Serve

Finish: sprinkle reserved crumbled cotija and chopped cilantro across the toasts. Dust lightly with extra smoked paprika. Add a final squeeze of lime to taste.

Serve warm: arrange on a platter and serve immediately while corn and cheese are warm. Provide extra lime wedges on the side.
