Prepare Cheese & Spread

    Grate and mix cheeses

    Grate the sharp cheddar, Gruyère, and shred the fontina into a bowl. Toss them together so the three cheeses are evenly distributed.

    Season cheese

    Add the finely grated garlic, chopped thyme (if using), black pepper, and sea salt to the cheese blend. Mix thoroughly so the seasonings are evenly incorporated.

    Prepare mustard spread

    On the inside face of two slices of bread (the future inside surfaces), spread 1/2 tablespoon Dijon mustard on each slice. This adds tang and helps balance the richness.

Assemble Sandwiches

    Divide the cheese mixture between the two mustard-spread slices, piling the cheese in an even layer across each slice leaving a 1/2-inch border to avoid overflow when melting.

    If using optional extras, add them now: a layer of caramelized onions or bacon on top of the cheese, or a few tomato slices (pat tomatoes dry) and a small handful of arugula/spinach. Top each with the remaining bread slices to form two sandwiches.

    Press each sandwich gently to compact the fillings slightly; do not compress so much that cheese squeezes out.

    Butter the exterior

    Spread about 3/4 tablespoon softened butter on the outside face of each of the four bread slices (total ~3 tbs used). The buttered side will contact the skillet; this creates even browning. For extra crispness, brush a little olive oil on top of the buttered side.

    Preheat pan

    Heat a heavy skillet or cast-iron pan over medium-low heat. Allow 3–4 minutes so the pan heats evenly; medium-low ensures the cheese melts before the bread over-browns.

    Place the sandwiches in the skillet, buttered side down. Cook for 4–6 minutes until the bottom is deep golden brown and crisp. Adjust heat if browning too quickly.

    Flip the sandwiches carefully with a spatula. Cook the second side for another 3–5 minutes. To help the cheese finish melting without burning the bread, reduce heat to low and cover the pan with a lid or tent loosely with foil for 1–2 minutes if needed.

    If you prefer an extra-pressed result, weight the sandwiches lightly with a second heavy pan (or a sandwich press) for 1–2 minutes while cooking the second side, but watch to prevent over-browning.
