Prepare the crust
Preheat the oven to 325°F (160°C). In a medium bowl, mix together the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake the crust
Bake the crust in the preheated oven for about 10 minutes, then remove and set aside to cool.
Make the filling
In a large mixing bowl, beat the softened cream cheese with the remaining 1/4 cup of sugar until smooth. Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Finally, mix in the flour until just combined.
Combine and bake
Pour the cream cheese mixture over the cooled crust. Bake in the oven for 55-60 minutes, or until the center is set and slightly jiggly.
Cool and chill
Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour. Then, remove from the oven and refrigerate for at least 4 hours, preferably overnight.
Serve
Once chilled, remove the cheesecake from the springform pan, slice, and serve.
