Curing the Tuna
Prepare the Cure
In a bowl, mix sea salt, brown sugar, and black pepper.
Cure the Tuna
Rub the cure mixture all over the tuna loin, ensuring it's fully coated. Wrap it in plastic wrap and refrigerate for 48 hours.
Preparing the Garnish
Prepare the Vegetables
Thinly slice the squash and radishes. Set aside.
Toast the Sunflower Seeds
In a dry skillet over medium heat, toast the sunflower seeds until golden brown. Stir frequently to avoid burning.
Assembly
Slice the Tuna
After 48 hours, remove the tuna from the fridge, rinse off the cure, and pat it dry. Slice the tuna loin thinly.
Plate the Dish
Arrange the sliced tuna on a plate. Garnish with the sliced squash, radishes, and sprinkle with toasted sunflower seeds. Drizzle with olive oil before serving.
