Prepare the Chicken
Season the chicken breasts with salt and pepper. Heat olive oil in a pan over medium heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from the pan and let it rest.
Make the Salad
Peel and shred the green papaya. In a large bowl, combine the shredded papaya, lime juice, fish sauce, and chopped cilantro. Toss well to combine.
Prepare the Yuzu Emulsion
In a small bowl, whisk together coconut milk, yuzu juice, and spicy mustard until smooth and creamy.
Serve
Slice the cooked chicken and plate it alongside the green papaya salad. Drizzle the yuzu emulsion over the chicken, and garnish with crushed peanuts and shiso leaves. Serve immediately.
