Tomato Jam Preparation

Make the Tomato Jam

In a saucepan, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until softened. Add diced tomatoes, brown sugar, red wine vinegar, salt, and black pepper. Simmer for 30 minutes until thickened, stirring occasionally.

Grilled Focaccia

Grill the Focaccia

Brush the focaccia bread with olive oil and sprinkle with sea salt. Grill on medium-high heat for 3-5 minutes on each side until golden and crispy.

Herb Salad

Prepare the Herb Salad

In a bowl, combine mixed fresh herbs. Drizzle with olive oil and lemon juice, and season with salt and black pepper. Toss gently to combine.

Assembly

Assemble the Dish

On a serving platter, place the grilled focaccia slices. Top with burrata cheese and spoon over the tomato jam. Garnish with the herb salad and Spanish olives.
