Burger Patties
Form patties
Divide the 0.5 lb wagyu ground beef into two equal portions (~4 oz each). Gently form each portion into a loose patty about 2.5–3 inches in diameter and roughly 1/2 inch thick. Do not overwork the meat—lightly press a small dimple in the center of each patty with your thumb to help them cook flat.
Cooking & Cheese
Cook patties
Place the patties in the hot pan leaving space between them. Cook undisturbed for 2–3 minutes until a brown crust forms. Flip and cook another 1.5–2 minutes for medium-rare to medium (adjust time if you prefer more done).
Add cheese
About 30 seconds before removing from the pan, place one thin slice of sharp cheddar on each patty. Cover the pan with a lid or a large bowl for 20–30 seconds to help the cheese melt.
Onions & Buns
Assemble & Serve
Spread 1 tsp mayonnaise on the bottom half of each toasted bun. Spread 1/2 tsp ketchup and 1/2 tsp yellow mustard on the top halves (or combine on one half if preferred).
Place a cheeseburger patty on each prepared bottom bun. Top each patty with a portion of the cooked onions (divide 1/4 cup between the two), then add 2 pickle slices per slider.
Set the top bun on each slider and press lightly. Serve immediately while hot.
