Burger Patties

Buns & Condiments

Method

Burger Patties

1

Form patties

Divide the 0.5 lb wagyu ground beef into two equal portions (~4 oz each). Gently form each portion into a loose patty about 2.5–3 inches in diameter and roughly 1/2 inch thick. Do not overwork the meat—lightly press a small dimple in the center of each patty with your thumb to help them cook flat.

2

Season

Pat both sides of each patty dry with a paper towel. Season both sides evenly with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Lightly brush or dot each patty with 1/4 tbs Worcestershire sauce, gently spreading with your fingers.

Cooking & Cheese

3

Preheat pan

Heat a heavy skillet or cast-iron pan over medium-high heat until hot, about 2–3 minutes. Add 1 tsp vegetable oil and swirl to coat.

4

Cook patties

Place the patties in the hot pan leaving space between them. Cook undisturbed for 2–3 minutes until a brown crust forms. Flip and cook another 1.5–2 minutes for medium-rare to medium (adjust time if you prefer more done).

5

Add cheese

About 30 seconds before removing from the pan, place one thin slice of sharp cheddar on each patty. Cover the pan with a lid or a large bowl for 20–30 seconds to help the cheese melt.

Onions & Buns

6

Caramelize quick onions (optional)

In the same pan after removing patties, reduce heat to medium-low. Add the 1/4 cup thinly sliced yellow onion and cook for 3–4 minutes, stirring occasionally, until softened and slightly golden. Remove and keep warm.

7

Toast buns

Butter the cut sides of the 2 mini brioche slider buns with 1 tsp butter. Return the pan to medium heat and toast the buns cut-side down for 30–45 seconds until golden. Remove from pan.

Assemble & Serve

8

Spread 1 tsp mayonnaise on the bottom half of each toasted bun. Spread 1/2 tsp ketchup and 1/2 tsp yellow mustard on the top halves (or combine on one half if preferred).

9

Place a cheeseburger patty on each prepared bottom bun. Top each patty with a portion of the cooked onions (divide 1/4 cup between the two), then add 2 pickle slices per slider.

10

Set the top bun on each slider and press lightly. Serve immediately while hot.
