Prep and freeze

If you want a quicker churn and a denser texture, spread the chopped mango, pineapple and sliced banana in a single layer on a parchment-lined baking sheet and freeze for 30–60 minutes until very cold but not rock-solid. Alternatively proceed with fresh fruit if you plan to chill the puree thoroughly.

Reserve the passion fruit pulp (if using) separately at room temperature; seeds can be included for texture or pushed through a sieve for a smoother sorbet.

Make Simple Syrup

Combine the granulated sugar and water in a small saucepan. Heat over medium, stirring until sugar dissolves and the mixture just comes to a simmer. Remove from heat and let cool to room temperature. If using corn syrup/glucose, stir it into the warm syrup so it dissolves, then cool.

Puree & Balance

Place the frozen (or very cold) mango, pineapple and banana into a high-speed blender or food processor. Add the cooled simple syrup, lime juice and salt.

Pulse/blend until completely smooth, scraping down the sides as needed. If mixture is too thick to move, add a tablespoon or two of cold water or extra cooled simple syrup to help it circulate (add sparingly to avoid thinning).

Taste the puree: the flavor should be bright and slightly sweeter than you want the finished sorbet because freezing dulls sweetness. Add more lime for brightness or a tablespoon more syrup if needed. Fold in the passion fruit pulp now; if you prefer no seeds, press pulp through a fine mesh sieve into the puree and discard seeds.

Chill & Churn

Chill the puree in the refrigerator until it reaches 35–45°F (2–7°C), about 30–60 minutes. Very cold base yields better texture.

Pour the chilled fruit base into a pre-cooled ice cream maker and churn according to manufacturer's instructions until it reaches a soft-serve consistency (typically 20–30 minutes). The optional corn syrup in the base will help keep it scoopable after freezing.

Firm Up & Serve

Transfer the churned sorbet to a shallow, freezer-safe container, smoothing the top. Press a piece of parchment directly on the surface to prevent ice crystals and cover with an airtight lid.

Freeze for at least 2 hours to firm up to scoopable texture. For firmer results, freeze 3–4 hours. Remove from the freezer 8–10 minutes before serving to soften slightly for easy scooping.

Scoop into bowls or glasses, garnish with fresh mint leaves and a small wedge of lime or a few passion fruit seeds. Serve immediately.

Storage

Store leftover sorbet tightly covered in the coldest part of the freezer for up to 2 weeks. To refresh texture after long storage, let soften at room temperature for 10–15 minutes, then whisk briefly before serving.
