Combine ingredients

Add the pineapple juice, orange juice, cream of coconut, lychee juice and white rum (if using) to a cocktail shaker or a blender.

Add ice

Add the ice cubes to the shaker or blender. If you prefer the drink less diluted and chilled, use 1/2 cup crushed ice instead and pulse briefly.

Shake or blend

If using a shaker: secure the lid and shake vigorously for 12–15 seconds until well chilled and slightly frothy. If using a blender: blend on low speed for 8–10 seconds until smooth and frothy but not slushy.

Taste and adjust

Taste the mixture and adjust sweetness or creaminess as desired: add 1/2 oz extra lychee juice for more lychee flavor, or 1/4–1/2 oz additional cream of coconut for more richness. Shake or pulse briefly again after adjusting.

Serve over ice

Fill a highball or hurricane glass with fresh ice. Strain the cocktail from the shaker (or pour from the blender) into the prepared glass over the ice.

Garnish & Finish

Skewer the canned or fresh lychee on a cocktail pick and place it on the rim or drop it into the drink. Garnish the glass with the pineapple wedge and optionally a mint sprig. Serve immediately with a straw.
