Place the serving glasses in the freezer for 5–10 minutes or fill with ice while you prepare the drink to keep everything cold.

In a mixing glass or shaker, add the fresh lemon juice, simple syrup, and fresh mint leaves. Using a muddler or the back of a spoon, gently press the mint 4–6 times to release aroma — avoid over-muddling to prevent bitterness.

Add the chilled hard cider to the muddled mint mixture. If using the optional spirit (rum or vodka), add it now. Stir gently 6–8 times to combine — do not shake to preserve cider carbonation.

Pour the mixture into the chilled serving glass over fresh ice (if not already chilled). Top with the chilled seltzer, pouring slowly to maintain effervescence. Stir once gently to incorporate.

Garnish & Serve

Slap the remaining mint leaves between your palms to wake the oils, then tuck them into the glass. Add 2–3 thin apple slices on top or on the rim for a bright visual and extra apple aroma.

Taste and adjust sweetness if needed: add an extra 1/2 tsp simple syrup if you prefer sweeter. Serve immediately while fizzy.
