Prepare glass
Fill a double old-fashioned glass or a rocks glass generously with crushed ice and set aside to chill while you mix the drink.
Mix base
In a cocktail shaker, add the Bacardi white rum (1.5 oz), Mahina coconut & vanilla rum (0.75 oz), fresh lime juice (0.75 oz), orange curaçao (0.5 oz), orgeat (0.5 oz) and simple syrup (0.25 oz).
Shake
Add a handful of ice to the shaker, secure the lid, and shake vigorously for about 10–12 seconds until well chilled (the shaker should be very cold to the touch).
Strain over crushed ice
Discard the chilling ice from the glass if desired, then fill the glass with fresh crushed ice. Double-strain the shaken mixture over the crushed ice using a Hawthorne or fine strainer so the drink sits nicely atop the ice.
Float dark rum
Carefully pour the dark rum (0.5 oz) over the back of a bar spoon so it floats on top of the drink, creating the classic Mai Tai dark-rum float.
Garnish
Garnish with a fresh mint sprig tucked into the crushed ice and a lime wheel or wedge on the rim. Optionally add one dash of Angostura bitters on top of the float for aroma and complexity.
Serve
Serve with a short straw (or none) so the drink can be sipped through the float. Encourage the drinker to stir lightly if they prefer more integration of the float.
