Method
Simple syrup (sweetening base)
Make syrup
Combine 1 cup sugar and 1 cup water in a small saucepan. Add the optional lemon zest if using. Warm over medium heat, stirring occasionally, until the sugar fully dissolves and the liquid is clear (do not boil vigorously). Remove from heat and let the syrup cool to room temperature, then chill in the refrigerator until cold (about 20–30 minutes).
Fruit purée
Prepare fruit
While the syrup cools, hull and rinse the strawberries (or prepare your chosen berries). Peel and dice the mango (or other chosen stone fruit) and measure 1 cup of fruit. Place all fruit in a blender or food processor.
Blend
Add 2 tablespoons fresh lemon juice and 1/2 cup of the chilled simple syrup to the blender. Purée on high until completely smooth, about 45–60 seconds. Taste the purée: if it tastes too tart, add up to another 1/4–1/2 cup chilled syrup in small increments and blend again. If too sweet, add a splash more lemon juice.
Strain (optional)
For an ultra-smooth sorbet, press the purée through a fine-mesh sieve into a bowl to remove seeds and fibrous bits, using the back of a spoon to help push the purée through. Discard solids.
Chill purée
Cover the puréed fruit and chill in the refrigerator until very cold, at least 30 minutes (or up to 2 hours). Cold base yields better texture when churning.
Churning and finishing
Churn
Pour the chilled fruit purée into the bowl of an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft sorbet consistency (usually 20–30 minutes). If you do not have an ice cream maker, pour the purée into a shallow metal pan and freeze; every 30 minutes for about 2–3 hours, scrape and break up ice crystals with a fork until smooth and scoopable.
Stabilize and firm up
Transfer the churned sorbet to an airtight container. If using, stir in 1 tablespoon vodka or light liqueur to improve scoopability (this is optional). Smooth the top, press a sheet of plastic wrap directly on the surface to prevent ice crystals, and seal the container. Freeze for at least 2 hours to firm to serving texture.
Serve
Scoop the sorbet with a warmed ice cream scoop (dip in hot water and dry) into chilled bowls or glasses. Garnish with fresh mint leaves. Let slightly soften at room temperature for 2–3 minutes before serving for the best texture.
