Ensure each draft line is cleaned and flushed according to brewery/draught system schedule. Chill five clean 16 oz glasses in an ice well or refrigerator for at least 10–20 minutes so the beers maintain proper temperature when poured.

Prepare glassware and lines

Place the five chilled glasses on a sanitary tray or bar rail in the order you plan to present: Big Wave Golden Ale, Hanalei Island IPA, Longboard Island Lager, Aloha Red Zeppelin, Pacifico Lager. Position a lime wedge next to the Pacifico pour if offering garnish.

Set up pours

Hold the glass at a 45° angle about 1–2 inches from the faucet. Open the tap fully and aim for a steady stream down the side of the glass. When the glass is about two-thirds full, tilt upright and finish with a 1–1.5 inch head. Close the tap quickly to avoid excessive foam. Serve immediately.

Pour Big Wave Golden Ale

Using a clean glass, repeat the 45° angled pour. Because IPAs can be more aromatic, leave a slightly larger head (about 1.5 inches) to capture volatiles. Close the tap cleanly and set the glass in order.

Pour Hanalei Island IPA

Pour the lager with the same technique at 45°. Aim for a crisp 1–1.5 inch head. Lagers are best served cold and bright; ensure the line has no obstructions or excess foam.

Pour Longboard Island Lager

This red ale has maltier body—pour at 45° and bring upright toward the end to create a 1–1.25 inch creamy head. Watch for any residual yeast or sediment in the line; if present, pour slightly slower toward the end.

Pour Aloha Beer Company Red Zeppelin

Pour Pacifico using the same 45° technique and finish with a light head. Offer the lime wedge on the side: instruct guests to squeeze and drop in lime if desired or serve separately so guests may choose.

Pour Pacifico Lager

Arrange the five pours on a flight paddle or tray in the same order as presented. Note the beer names and brief style (Golden Ale, IPA, Lager, Red Ale, Lager) on a small card if available. Advise guests of tasting order (lighter to bolder: Big Wave → Longboard → Pacifico → Hanalei IPA → Red Zeppelin or adjust by house preference). Replace any used lime wedges and ensure quick service so beers remain at optimal temperature.

Presentation and service

After service, inspect lines for excessive foam or off-flavors. Follow standard cleaning schedule: flush taps between batches, and perform routine chemical cleaning of lines as recommended by the brewery (typically every 7–14 days depending on beer type). Rinse glasses and chill clean replacements for the next service.
