Citrus Infused Sparkling Base
Prepare simple syrup
Combine equal parts sugar and water (1/2 cup sugar + 1/2 cup water) in a small saucepan. Heat over medium, stirring until sugar dissolves. Remove from heat and cool to room temperature, about 10 minutes.
In a large pitcher (at least 2 liters), combine the fresh orange juice (1 cup), fresh lemon juice (1/4 cup), cooled simple syrup (1/2 cup), orange zest (1 tbsp) and lemon zest (1 tbsp). Stir to combine.
Add 6 cups of chilled club soda or sparkling water to the citrus mixture and stir gently to retain bubbles. Taste and adjust sweetness with up to 2 additional tablespoons of simple syrup if needed.
Herbal-Fruity Additions
Lightly bruise mint and basil leaves with the back of a spoon or in your palm to release aroma. Add the leaves to the pitcher with the citrus-sparkling base.
Add the hulled, sliced strawberries (1 cup) and the optional frozen berries (1/2 cup) to the pitcher. Stir gently to incorporate. Let the mixture rest in the refrigerator for 20–30 minutes to allow the flavors to meld.
Alcohol Options (Domestic Bottles)
When ready to serve, decide on the alcohol option: pour 4 cups of chilled light lager (approx. four 12-oz domestic bottles) into the pitcher for a beer-forward brunch spritz. Alternatively, use 4 cups pale ale for a hoppier profile. For a stronger, clearer version, omit beer and add 8 teaspoons (approximately 1 1/3 tablespoons) vodka per 6–8 servings directly to the pitcher and stir.
If using beer, pour it in gently and stir once to combine. If using vodka, add it to the citrus-herb base and stir.
Garnish & Serving
Serve immediately so the sparkling character of the drink remains. Leftovers (without ice) may be refrigerated for up to 24 hours; if beer is included, consume within 6–8 hours for best carbonation.
