Prepare shrimp

Rinse shrimp under cold water, pat dry thoroughly with paper towels. Leave tails on for presentation. Lightly butterfly large shrimp by slicing along the back without cutting through to flatten slightly (optional).

In a bowl, combine lime juice, minced garlic, 1 tsp salt and 1 tsp black pepper. Add the shrimp and toss to coat. Marinate in the refrigerator 10–15 minutes while you prepare the breading station. Do not marinate longer than 30 minutes or shrimp will become overly firm.

Arrange three shallow bowls or plates: Bowl 1 — the flour (3 tbs). Season the flour with a pinch of salt. Bowl 2 — whisk together the beaten eggs and 3 tbs milk (or coconut milk) until smooth. Bowl 3 — combine the cornmeal/panko, toasted shredded coconut, 1 tbs dry breadcrumbs (if using), cayenne pepper (if using), and 1/2 tsp kosher salt. Break up any large coconut clusters so the mix is fairly even.

Dredge method: Remove shrimp from marinade and shake off excess. One at a time, dredge shrimp in flour, shaking off excess; dip into egg wash letting excess drip off; press into coconut-panko mixture, coating thoroughly and pressing gently so shredded coconut adheres. Place breaded shrimp on a wire rack set over a baking sheet to rest for 5 minutes — this helps the coating set and reduces loss during frying.

Heat oil: In a heavy skillet or shallow frying pan (cast iron or stainless), pour oil to a depth of about 1/3 inch (roughly 1 cup). Heat over medium-high until oil registers 350°F (175°C) on a thermometer, or a small piece of bread sizzles and browns in about 40–45 seconds. Maintain temperature between 325–350°F while frying.

Fry shrimp in batches to avoid crowding (about 6–8 shrimp per batch depending on pan). Gently place shrimp, flat side down first, and fry 1.5–2 minutes per side until golden brown and coconut is lightly toasted. Turn once with tongs. Total cook time per shrimp is about 3–4 minutes. Do not overcook — shrimp should be opaque and just firm.

Remove shrimp with a slotted spoon or tongs and transfer to a paper towel-lined plate or a wire rack to drain. Keep cooked shrimp warm in a 200°F (95°C) oven on a baking sheet while frying remaining batches.

Taste and adjust: If desired, sprinkle a light pinch of flaky sea salt over the hot shrimp just after frying to enhance flavor. Garnish with lime wedges and cilantro.

Sweet Chili Dipping Sauce

Make sauce: In a small bowl, whisk together 1/2 cup sweet chili sauce, 3 tbs mayonnaise, 1 tbs lime juice, grated ginger (if using), and sriracha to taste. Adjust balance: add more mayo for creaminess, more lime for tang, or extra sriracha if you want heat. Chill until ready to serve.

Serve: Plate coconut crunchy shrimp with lime wedges and cilantro. Provide the sweet chili dipping sauce alongside. For an appetizer, arrange on a platter; for a main, serve over rice or salad greens.
