Appetizer — Mini Fruit & Yogurt Parfait
Prepare yogurt
In a small bowl, stir the Greek yogurt with 1 tablespoon honey until smooth and slightly sweetened.
Assemble parfait
In a small clear cup or child-friendly bowl, spoon 2 tablespoons of the honeyed yogurt into the bottom. Add a layer of half the diced strawberries and a few banana slices. Sprinkle 1 tablespoon granola on top. Repeat with remaining yogurt and fruit to make two thin layers, finishing with blueberries and remaining granola as a garnish.
Serve
Serve immediately so granola stays crunchy. Keep chilled if not serving right away.
Main — Cheesy Turkey Sliders with Veggie Sticks
Make slider patties
Preheat a skillet over medium heat and lightly coat with the 1 teaspoon olive oil. In a small bowl, combine the 4 oz ground turkey, 1 tablespoon breadcrumbs, 1/2 beaten egg, 1/8 tsp salt and 1/16 tsp black pepper. Mix gently until just combined. Shape into two small flat patties roughly the size of the slider buns.
Cook patties
Place the patties in the preheated skillet. Cook 2–3 minutes per side, or until the internal temperature reaches 165°F (74°C) and juices run clear. During the last 30 seconds of cooking, place the 1 oz cheddar slice on each patty and cover the skillet for 20–30 seconds to melt the cheese.
Assemble sliders
Place each melted-cheese turkey patty onto a slider bun and top with the other half of the bun. Cut each slider in half if desired for smaller portions suitable for a child.
Dessert — Warm Chocolate-Dipped Banana Bite
Garnish and serve
Sprinkle optional chopped nuts or sprinkles on the chocolate while it is still wet. Serve immediately for a warm bite, or chill 5–10 minutes to set the chocolate if preferred.
