Biscuits
Prepare the Biscuit Dough
Preheat the oven to 425°F (220°C). In a large bowl, mix together flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined.
Bake the Biscuits
Turn the dough out onto a floured surface, knead gently, and roll to about 1-inch thickness. Cut out biscuits and place on a baking sheet. Bake for 12-15 minutes until golden brown.
Fried Green Tomatoes
Prepare the Tomatoes
Slice green tomatoes into 1/4 inch thick slices. Season with salt and pepper.
Fry the Tomatoes
Dredge the tomato slices in buttermilk, then coat in cornmeal. Heat oil in a skillet over medium-high heat. Fry the tomatoes until golden brown, about 3-4 minutes per side. Drain on paper towels.
Poached Eggs
Poach the Eggs
Bring a pot of water to a simmer and add vinegar. Crack eggs into a small bowl, then gently slide them into the simmering water. Cook for 3-4 minutes until whites are set. Remove with a slotted spoon.
Hollandaise Sauce
Onion Strings
Prepare the Onion Strings
Slice the onion into thin rings. Soak onion rings in buttermilk for 10 minutes, then dredge in a mixture of flour, cornstarch, salt, and pepper.
Fry the Onion Strings
Heat oil in a frying pan over medium heat. Fry the onion strings until golden brown and crispy. Drain on paper towels.
