Preparation Instructions
Prepare the Broth
In a large pot, heat olive oil over medium heat. Add chopped lemongrass and sauté for 2 minutes until fragrant. Pour in the vegetable broth and bring to a simmer. Add chopped cilantro and let it simmer for 15 minutes. Strain the broth and set aside.
Prepare the Tuna
Preheat the oven to 400°F (200°C). In a shallow dish, mix sesame seeds and crushed wasabi peas. Season the ahi tuna steaks with salt and black pepper, then press them into the sesame mixture to coat both sides.
Cook the Tuna
Heat a non-stick skillet over medium-high heat. Add a tablespoon of olive oil. Once hot, add the coated tuna steaks. Cook for about 2-3 minutes on each side for medium-rare, or longer to your desired doneness.
Plate the Dish
In a serving bowl, place a portion of the braised baby bok choy and sweet peppers. Pour over the lemongrass cilantro broth. Top with the sesame-crusted tuna and garnish with pickled ginger.
