Preparation

Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking.

Season the Steaks

Pat the steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper.

Preheat the Skillet

Heat a large cast-iron skillet over high heat until it’s smoking hot.

Cook the Steaks

Add the steaks to the skillet. Cook for 4-5 minutes on one side without moving them, until a nice crust forms. Flip the steaks and add garlic, rosemary, and butter to the pan.

Baste the Steaks

As the steaks cook on the second side for another 4-5 minutes, tilt the pan and use a spoon to baste the steaks with the melted butter and juices.

Check Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130°F (54°C).

Rest the Steaks

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing.
