Preparation
Prepare the Chicken
If using grilled chicken tenders, season with salt and pepper and grill until cooked through, about 5-7 minutes per side. For fried chicken, heat oil in a skillet and fry the chicken tenders until golden brown and cooked through, about 3-4 minutes per side. Let cool before slicing.
Make the Dressing
In a bowl, whisk together 3 tablespoons of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of honey, and 1 teaspoon of grated ginger until smooth. Adjust the consistency with water if needed.
Assemble the Salad
In a large bowl, combine baby greens, sliced chicken tenders, carrots, cucumber, scallions, and cilantro. Drizzle with ginger-peanut dressing and toss to combine.
Serve
Top the salad with roasted peanuts and toasted sesame seeds just before serving.
