Preparation Steps
Prepare the Chicken
Season the chicken tenders with salt and pepper. Grill or fry them over medium heat until fully cooked, about 6-8 minutes per side. Once cooked, slice into strips.
Prepare the Vegetables
In a large bowl, combine baby greens, shredded carrots, sliced cucumber, chopped cilantro, and sliced scallions.
Make the Dressing
In a small bowl, whisk together peanut butter, soy sauce, ginger, garlic, lime juice, and sesame oil. Adjust seasoning with salt and pepper to taste.
Assemble the Salad
Add the sliced chicken tenders and roasted peanuts to the bowl of vegetables. Drizzle with the ginger-peanut dressing and toss gently to combine.
Serve
Sprinkle toasted sesame seeds on top and serve immediately.
