In a large skillet over medium heat, add the olive oil. Once hot, add the andouille sausage and sauté until browned, about 5 minutes. Remove and set aside.

Sauté the Vegetables

In the same skillet, add the bell pepper, onion, celery, and garlic. Sauté until the vegetables are soft, about 5-7 minutes.

Combine Ingredients

Add the crawfish tails, lump crab meat, diced tomatoes, chicken broth, Cajun seasoning, salt, and black pepper to the skillet. Stir well to combine.

Bring the mixture to a simmer and cook for about 10-15 minutes, allowing the flavors to meld together.

Finish and Serve

Return the andouille sausage to the skillet, stir to combine, and cook for an additional 2-3 minutes. Serve hot over Delta Grind garlic cheddar stone grits.
