Make the Roux

In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour and cook, stirring constantly, until the roux is a deep brown color (about 20-30 minutes).

Sauté the Vegetables

Add the chopped onion, bell pepper, celery, and garlic to the roux. Sauté for about 5 minutes, until the vegetables are softened.

Add Liquids and Seasoning

Stir in the diced tomatoes, chicken broth, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring to a boil, then reduce heat to simmer.

Add Proteins

Add the sliced andouille sausage, crab meat, and shrimp to the pot. Simmer for 20-30 minutes until the shrimp are cooked through.

Serve

Remove bay leaves before serving. Serve the gumbo over cooked white rice and garnish with sliced green onions.
