Omelet base

Method

Prepare filling

    Pick through the lump crab meat to remove any shell pieces and gently break up large lumps so the crab remains flaky.

    Combine the crab in a small bowl with the drained capers, the lemon zest, and 1/2 teaspoon fresh lemon juice. Season lightly with 1/4 teaspoon creole seasoning (reserved from omelet base) and a pinch of salt. Toss gently to combine and set aside.

    Place the grated Swiss cheese and the arugula on a small plate and set near your cooking station so the filling is ready to add to the omelet.

Mix omelet base

    In a medium bowl, crack the eggs and add the whole milk, Dijon mustard, the remaining creole seasoning (about 3/4 tsp), the salt, and pepper.

    Whisk vigorously until the mixture is homogenous and slightly frothy. This aeration helps produce a country-style fluffy texture.

Cook omelet

    Heat a 10-inch nonstick skillet over medium-low heat. Add the butter and olive oil. Swirl until butter is melted and foam subsides but not browned (about 1 minute).

    Give the egg mixture a final quick whisk. Pour the eggs into the skillet and let sit undisturbed for 10–15 seconds until edges begin to set.

    Using a silicone spatula, gently pull the set edges toward the center while tilting the pan to let the uncooked eggs flow to the edges. Continue this gentle folding/tilting motion for about 1.5–2 minutes until the eggs are mostly set but still moist on top.

    Add filling and finish

    Reduce heat to low. Sprinkle the grated Swiss cheese evenly over one half of the omelet, then add the prepared crab and caper mixture on top of the cheese (distribute evenly). Scatter the arugula over the crab. Fold the empty half of the omelet over the filling using the spatula.

    Let the folded omelet sit in the skillet for 30–45 seconds to allow cheese to melt and fillings to warm through without overcooking the eggs.

    Carefully slide the omelet onto a warm plate. If desired, dot the top with the remaining 1/2 tablespoon butter to gloss the surface.

Finish & garnish

    Taste and adjust seasoning with a small sprinkle of creole seasoning or a grind of black pepper, if needed.

    Garnish with the snipped fresh chives and a few extra whole capers if desired. Serve immediately with lemon wedges on the side.
