Egg Base

Whisk eggs
Crack 6 large eggs into a medium mixing bowl. Add 3 tablespoons whole milk, 1 teaspoon Dijon mustard, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until fully combined and slightly frothy (about 30–45 seconds). Rest the mixture for 5 minutes to let air bubbles settle for a country-style fluffy texture.

Prepare crab
In a small bowl, gently break up 6 oz super lump crab meat into bite-size pieces, removing any cartilage. Carefully fold in 1 tablespoon chopped drained capers, 1 teaspoon Creole seasoning, and 1 teaspoon fresh lemon juice. Set aside.

Warm crab (optional)
Heat a small skillet over medium-low and add 2 tablespoons unsalted butter. When the butter foams, add the seasoned crab and gently warm for 30–45 seconds just to take the chill off and meld flavors; do not over-stir to avoid breaking the lumps. Remove from heat and keep warm.

Heat pan
Use a 10–12 inch nonstick or well-seasoned omelet pan (or a wood oven-safe skillet if replicating a wood oven setup). Place over medium-low heat and add 1 tablespoon unsalted butter. Swirl to coat and allow butter to foam but not brown.

Cook eggs
Pour the whisked egg mixture into the pan. Allow eggs to set gently at the edges for about 20–30 seconds, then using a silicone spatula, pull the set edges toward the center while tilting the pan so uncooked eggs flow to the perimeter. Continue until the eggs are mostly set but still slightly custardy on top (about 2–3 minutes total over medium-low).

Finish and fold
Using the spatula, carefully fold the empty half of the omelet over the filled half. Let cook for 30–60 seconds to allow the cheese to melt through and the fillings to warm without overcooking the eggs. If the surface still looks too runny, cover the pan briefly (15–20 seconds) to finish.

Plate
Slide the omelet onto a warm plate. If desired, spoon any leftover buttery pan juices over the top. Garnish with a few capers and a light sprinkle of Creole seasoning or cracked black pepper.

Serve immediately with a lemon wedge on the side. The omelet should be fluffy and slightly creamy inside with distinct lumps of crab, melty Swiss, peppery arugula, and pops of briny caper/Creole seasoning.
