Prepare glassware

Chill a coupe or old-fashioned glass by filling it with ice water while you prepare the cocktail. Let sit for a minute, then discard the ice water and set the glass aside to keep cool.

Dry shake (if using egg white)

In a cocktail shaker, combine 2 oz Dewar's White Label, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and 0.5 oz egg white (if using). Seal the shaker and shake vigorously without ice for 15–20 seconds to emulsify and build a silky foam.

Wet shake

Add a handful of ice (about 1 cup) to the shaker. Seal and shake vigorously for another 10–15 seconds until well chilled (exterior of shaker becomes very cold).

Strain

Double-strain the cocktail into the chilled coupe or old-fashioned glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and ensure a smooth texture.

Finish

Add 2 dashes of Angostura bitters on the foam and, if desired, use a toothpick to create a small pattern. Express a lemon twist over the drink to release oils, then drop it into the glass as garnish.

Serve

Serve immediately while cold. If you did not use egg white, the cocktail will be slightly more transparent but equally balanced β€” adjust lemon or syrup to taste.
