Mojito Base
Prepare glass and mint
Place 10 fresh mint leaves and the lime wedge into a sturdy highball or Collins glass. If the lime wedge is large, squeeze it lightly over the glass to release juice before dropping it in.
Muddle
Using a muddler, gently press and twist the mint and lime together about 6–8 times. Aim to bruise the mint to release oils without shredding it (avoid pulverizing, which causes bitterness).
Add liquids
Pour in 1 oz fresh lime juice, 0.5 oz fresh lemon juice, 0.75 oz simple syrup, and 2 oz white rum into the glass.
Light stir
Use a bar spoon to gently stir the mixture 6–8 times to combine and dissolve the syrup evenly into the citrus and rum.
To Finish
Add ice
Fill the glass with about 1 cup of crushed ice, packing it lightly so the drink stays cold and slightly slushy.
Top with soda
Gently pour 3 oz club soda over the ice to top the drink. Leave a small headroom to avoid overflow.
Final lift
Briefly stir once or twice from bottom to top to lift mint leaves through the drink without over-agitating the soda (this preserves carbonation).
Garnish and serve
Slap the mint sprig between your palms to awaken the aroma and place it on top as a garnish. Optionally add a lime wheel. Serve immediately with a straw or stirring stick.
