Prepare dry ingredients
In a medium bowl, whisk together 1 cup all-purpose flour, 1/4 cup rice flour (or cornstarch), 2 tablespoons granulated sugar, 1 teaspoon baking powder, and 1/4 teaspoon fine salt until evenly combined.
Combine wet ingredients
In a separate small bowl, beat 1 egg lightly, then whisk in 1/2 cup milk and 1 teaspoon vanilla extract (and 1/2 teaspoon lime or lemon zest, if using).
Make batter
Pour the wet mixture into the dry ingredients and stir gently with a spatula until just combined. The batter should be thick enough to coat a spoon but still pourable; if too thick, add up to 1 tablespoon more milk. Do not overmix — a few small lumps are fine.

Prepare bananas
Peel 3 ripe but firm bananas. Cut them into 2–3 inch diagonal pieces, or slice lengthwise into halves for longer fritters. Pat the banana pieces dry with paper towels to remove surface moisture.
Dust with cornstarch
Place 2 tablespoons cornstarch (or extra flour) on a plate. Lightly toss or dredge each banana piece in the cornstarch so they have a thin, even dusting — this helps the batter adhere and yields a crisper crust.
Frying & Finish
Heat oil
Pour about 1 cup of neutral oil into a medium skillet (or enough to come about 1/2 inch up the sides) and heat over medium-high until it reaches 350°F (175°C) or until a small drop of batter sizzles and rises to the surface immediately. If you don’t have a thermometer, test with a small bit of batter: it should bubble steadily and brown in about 30–40 seconds.
Fry fritters
Working in a single layer and in batches (do not overcrowd), gently lower battered banana pieces into the hot oil. Fry for about 2–3 minutes per side, or until golden brown and crisp. Use a slotted spoon or tongs to turn pieces halfway through cooking for even color.
Drain
Transfer fried banana fritters to a wire rack set over a baking sheet or a plate lined with paper towels to drain excess oil. Keep them warm in a low oven (200°F/95°C) while you finish the remaining batches.
Finish and serve
While still warm, dust the fritters with 2 tablespoons powdered sugar mixed with 1/2 teaspoon ground cinnamon (optional). Serve immediately with 2 tablespoons maple syrup or honey for drizzling, if desired.
