Base Salad
Wash and dry the salad greens thoroughly. Tear any large leaves into bite-sized pieces and put into a large salad bowl (about 10–12 inch).
Halve the cherry tomatoes and thinly slice the red onion. Add tomatoes and onion to the bowl with the greens.
Sprinkle 1/2 cup freshly grated parmesan and 1 cup croutons over the top. Do not toss yet; dress just before serving.
Cafe Vinaigrette (for Mixed Green)
Make vinaigrette
In a small bowl or jar, combine 2 tablespoons red wine vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 minced garlic clove, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Whisk while slowly streaming in 1/4 cup extra-virgin olive oil until emulsified. Taste and adjust seasoning.
To serve a Mixed Green Salad: drizzle vinaigrette over the prepared greens (start with about 2–3 tablespoons for 4 servings), toss gently to coat, then top with additional croutons or parmesan if desired.
Caesar Dressing (contains raw egg)
Make traditional Caesar dressing (raw egg)
Important: this dressing contains raw egg yolks. Use fresh, properly refrigerated eggs and inform diners. In a medium bowl, whisk together 2 egg yolks, 2 tablespoons fresh lemon juice, 1 teaspoon Worcestershire sauce, 1 teaspoon anchovy paste, 1 teaspoon Dijon mustard and 1 minced garlic clove until smooth.
Very slowly, with constant whisking, drizzle in 1/2 cup extra-virgin olive oil until the mixture emulsifies and thickens (or use a narrow blender cup and pulse while slowly adding oil). The dressing should be creamy and coat the back of a spoon.
Whisk in 1/4 cup finely grated parmesan, 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Taste and adjust lemon, salt or anchovy to preference.
To serve a Caesar Salad: toss the prepared greens (use mostly romaine if you prefer a classic Caesar) with about 3–4 tablespoons dressing per 4 servings until evenly coated. Add croutons and extra grated parmesan on top.
