Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it sit for 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice using a wooden spoon. Allow the rice to cool to room temperature.

Prepare Filling

Slice the ahi tuna into thin strips. In a bowl, mix the tuna with sriracha sauce and set aside. Thinly slice the avocado and cucumber.

Assemble the Rolls

Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge. Place a line of the spicy tuna mixture, avocado slices, and cucumber strips in the center of the rice.

Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, tucking it tightly as you go. Wet the top edge of the nori with a little water to seal the roll.

Slice and Serve

Using a sharp knife, slice the roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi on the side.
