Prepare the Noodles

Soak the rice stick noodles in hot water for about 15 minutes until soft, then drain and set aside.

Prepare the Beef

Slice the beef tenderloin against the grain into thin strips.

Cook the Vegetables

In a large skillet or wok, heat vegetable oil over medium-high heat. Add sliced onion and red chilies, and stir-fry for about 2-3 minutes until softened.

Cook the Beef

Add the beef strips to the skillet and cook for 3-4 minutes until browned.

Make the Sauce

In a small bowl, mix together soy sauce, brown sugar, minced garlic, and grated ginger. Pour this sauce over the beef and vegetables in the skillet.

Combine with Noodles

Add the soaked rice stick noodles to the skillet, and toss everything together until well coated in the sauce. Cook for an additional 2-3 minutes to heat through.

Slice the green onions and sprinkle them over the top before serving.
