Prepare the Vermicelli Noodles

Boil water and cook the vermicelli noodles according to package instructions until tender. Drain and set aside.

Prepare the Lobster

If not already cooked, steam the lobster until fully cooked, cool, and then chop into bite-sized pieces.

Prepare the Vegetables and Herbs

Julienne the carrot and gather the fresh herbs. Rinse the spring mix salad greens and set aside.

Soften the Rice Paper

Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it becomes pliable. Remove and lay flat on a clean surface.

Assemble the Spring Rolls

Layer a small amount of lobster meat, vermicelli noodles, julienned carrot, spring mix, and fresh herbs on the lower third of the rice paper. Fold the sides over the filling and roll tightly from the bottom up.

Repeat the Process

Continue to soften rice paper and assemble the remaining spring rolls until all ingredients are used.

Serve

Serve the lobster spring rolls with sweet and sour relish and peanut sauce for dipping.
