Directions
Prepare the Lobster Stock
In a large pot, melt 2 tablespoons of butter over medium heat. Add lobster shells, onion, carrot, celery, and garlic. Sauté for 5-7 minutes until vegetables are soft. Stir in tomato paste and cook for another 2 minutes. Pour in the white wine and bring to a simmer, scraping the bottom of the pot to release any bits. Add fish stock and bring to a boil. Reduce heat and simmer for 30 minutes. Strain the stock and set aside.
Make the Bisque
In the same pot, melt the remaining 2 tablespoons of butter over medium heat. Add the strained lobster stock back to the pot. Stir in heavy cream, salt, black pepper, and cayenne pepper. Bring to a gentle simmer. Add the lobster meat and cook for 5 minutes until heated through.
Serve
Ladle the bisque into bowls and garnish with fresh parsley. Serve hot.
