Chicken Piccata

Prepare Chicken
Season the chicken breasts with salt and pepper on both sides. Dredge each piece in all-purpose flour, shaking off the excess.

Cook Chicken
In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts in batches and cook for about 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chicken broth, lemon juice, and capers. Bring to a simmer and cook for about 5 minutes.

Sprinkle with garlic powder and salt to taste. Cook for an additional 2-3 minutes until tender.

In a large bowl, combine the mixed salad greens, cherry tomatoes, and cucumber.
