Cocktail

Method

Prepare Glass

  1. 1

    Rim the glass

Choose a rocks or coupe glass. Run a lime wedge around the rim. Spread the coarse sea salt or smoked salt on a small plate and dip the rim into the salt, rotating to coat evenly. Set the glass aside.

  2. 2

If you prefer a half-salt rim, press the rim only halfway into the salt or wipe excess with a napkin.

Mix Cocktail

  1. 3

    Combine ingredients

Add 2 oz blanco ahumado tequila, 1 oz fresh lime juice, 0.75 oz Cointreau (or triple sec), 0.5 oz agave syrup, and 2 dashes orange bitters (if using) to a cocktail shaker.

  2. 4

    Add ice and shake

Fill the shaker with large ice cubes (about 1 cup) and shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted. The large ice cools quickly while minimizing dilution.

  3. 5

    Strain

Fill the prepared glass with fresh ice (large cube or crushed, depending on preference). Double-strain the cocktail into the glass using a Hawthorne strainer and, if available, a fine mesh strainer to catch small shards of ice and pulp.

Garnish & Finish

  1. 6

Express the oils from a thin orange twist over the drink by holding it over the surface and giving it a gentle squeeze, then run it around the rim and drop it in or discard per preference.

  2. 7

Garnish with a lime wheel or wedge on the rim. Serve immediately.
