Method
Roasted Fingerling Potatoes

Preheat and prepare
Preheat oven to 425°F (220°C). Line a rimmed baking sheet with parchment or foil.

Roast
Spread potatoes cut-side down in a single layer on the baking sheet. Roast 25–30 minutes, turning once halfway, until golden and crisp at edges and tender when pierced. Keep warm.
Steak

Bring steak to room temperature & season
Remove the 12 oz Wagyu NY strip from fridge 30–45 minutes before cooking so it comes close to room temperature. Pat dry with paper towels. Generously season both sides with 1 tsp kosher salt and 1 tsp freshly ground black pepper, pressing the seasoning into the meat.

Flip and baste
Flip the steak and add 1 tbs butter, 2 crushed garlic cloves, and 2 thyme sprigs to the pan. Tilt the pan and using a spoon continuously baste the steak with the melted butter and aromatics for about 2.5–3 minutes for medium-rare (internal temp ~125–130°F / 52–54°C). Adjust time for desired doneness.

Rest
Transfer the steak to a cutting board, tent loosely with foil and rest 8–10 minutes. While resting, spoon pan juices over steak once or twice. After resting, slice against the grain into 1/3–1/2 inch slices if serving sliced.

Fry eggs sunny-side (or to preference)
In a small nonstick skillet over medium-low heat, melt 1 tbs butter until foaming. Crack 2 eggs into the pan, spacing apart. Cook gently until whites are set and edges slightly crisp, about 3–4 minutes for sunny-side. Season with 1/4 tsp salt and 1/8 tsp black pepper. For over-easy, cook until whites set, then carefully flip and cook 20–30 seconds more.

Keep warm
If needed, keep eggs warm in a very low oven (200°F / 95°C) on a plate while finishing plating.
House Citrus Salad

Prepare citrus and dressing
Segment 1 orange and 1/2 grapefruit over a bowl to catch juices and remove membranes. In a small bowl, whisk together 1 tbs extra-virgin olive oil, 1 tbs fresh lemon juice, 1/2 tsp honey, 1/4 tsp salt and 1/8 tsp black pepper. Add any collected citrus juices to the dressing and whisk to combine.

Toss salad
In a serving bowl, combine 2 cups mixed baby greens, orange and grapefruit segments, and 2 tbsp thinly sliced red onion. Drizzle dressing over salad and toss gently to coat. Taste and adjust seasoning if needed.

Garnish and finish: Sprinkle chopped fresh parsley over potatoes and steak, finish the steak with a pinch (about 1/4 tsp) flaky sea salt. Serve immediately.
