Lobster Filling

Method

Prepare Lobster Filling

    Inspect and chop lobster

    If using pre-cooked lobster, remove any cartilage and shells. Pat meat dry with paper towels and roughly chop into 1/2- to 3/4-inch pieces. Place in a bowl.

    Combine base dressing

    In a separate mixing bowl, whisk together 1/4 cup mayonnaise, 1/4 cup Greek yogurt (or crème fraîche), 1 tablespoon fresh lemon juice, 1/2 teaspoon Dijon mustard, 1/2 teaspoon sea salt and 1/4 teaspoon black pepper until smooth and emulsified.

    Add mix-ins

    Fold the finely diced celery and sliced chives into the dressing. Taste and adjust seasoning with more lemon, salt, or pepper if needed.

    Fold in lobster

    Gently fold the chopped lobster into the dressed mixture until evenly coated. Do not over-mix; keep lobster pieces distinct. Cover and refrigerate for at least 20 minutes to let flavors meld (or up to 2 hours).

Make Fresno Emulsion

    Prepare chiles

    Remove stems from Fresno chiles and coarsely chop. For milder heat, remove seeds; for hotter emulsion, leave some or all seeds in.

    Blend emulsion

    In a small blender or using an immersion blender and jar, combine 1/4 cup mayonnaise, 2 tablespoons Greek yogurt, 1 teaspoon lemon juice, 1/2 teaspoon apple cider vinegar, chopped Fresnos, 1 teaspoon neutral oil (optional), 1/4 teaspoon sea salt and 1/4 teaspoon sugar. Blend until smooth and creamy. Taste and adjust acidity, salt, or sweetness. If the sauce is too thick, add up to 1–2 teaspoons additional oil or a splash of water and blend to reach desired spreadable consistency.

    Strain (optional)

    For a very silky emulsion, press the blended mixture through a fine-mesh sieve into a bowl to remove any large bits of pepper skin and seeds. Chill until assembly.

Toast Rolls & Assemble

    Prepare rolls

    Heat a large skillet or griddle over medium heat. Spread 1/2 tablespoon softened butter on the cut inner faces of each roll. When the skillet is hot, melt remaining 1 1/2 tablespoons butter and toast the rolls cut-side down until golden brown and crisp, about 1–2 minutes. Flip briefly to warm exterior if using brioche, then remove from heat.

    Apply Fresno emulsion

    Spread about 1 tablespoon of Fresno emulsion on the bottom (and optionally top) interior of each toasted roll. This adds heat and bright acidity against the lobster.

    Line rolls

    If using, place a small lettuce leaf or a couple of celery leaves in the bottom of each roll to provide a slight barrier against sogginess and add texture.

    Fill with lobster

    Divide the chilled lobster filling evenly among the 4 rolls (about 4 ounces per roll). Gently mound the lobster so pieces remain intact.

    Garnish and finish

    Drizzle an additional 1/2 teaspoon of Fresno emulsion over each filled roll if you want more heat and color. Scatter a few chives or microgreens on top and serve immediately with lemon wedges on the side.

Serving & Storage

    Serve lobster rolls immediately after assembly for the best texture. Leftover lobster filling can be stored in an airtight container in the refrigerator for up to 48 hours. Keep toasted rolls separate and assemble just before serving to preserve crispness. Fresno emulsion will keep refrigerated in a sealed container for up to 5 days; stir before using.
