    Prep the wings

    Pat the 2 lbs of chicken wings dry with paper towels. If whole wings are used, separate them at the joint into drumette and wingette; discard wing tips or save for stock. Drying the skin helps it crisp on the grill.

    Make the marinade

    Mince 3 cloves of garlic. In a large bowl combine 2 tbsp olive oil, 3 tbsp soy sauce, 2 tbsp fresh lemon juice, 1 tbsp honey, the minced garlic, 1 tsp smoked paprika, 1 tsp ground black pepper, 1 tsp kosher salt, and 1 tsp crushed red pepper flakes. Whisk until honey is incorporated and the mixture is uniform.

    Marinate the wings

    Add the dried wings to the bowl, toss thoroughly so every piece is coated. Cover and refrigerate for at least 30 minutes and up to 4 hours. For best flavor and texture, marinate 2–3 hours. Remove from fridge 20 minutes before grilling to take the chill off.

    Preheat and oil the grill

    Preheat a gas or charcoal grill to medium-high (about 400–425°F / 200–220°C). Clean the grate, then brush it lightly with 1 tsp neutral cooking oil using a folded paper towel held with tongs to prevent sticking.

    Grill the wings

    Place the marinated wings on the grill in a single layer skin-side down. Grill with the lid closed when possible. Cook 10–12 minutes per side, turning every 5–6 minutes to avoid flare-ups and to develop even char. Total grill time should be 20–25 minutes, or until the internal temperature reaches 165°F (74°C) and skin is crisp and browned. Watch for flare-ups from the marinade sugars (honey/soy); move wings to a cooler part of the grill if flames get too high.

    Rest and garnish

    Transfer the grilled wings to a resting plate for 5 minutes to let juices redistribute. Sprinkle with 2 tbsp chopped fresh parsley and serve with optional lemon wedges. Taste and add extra salt or pepper if needed.
