Prepare an ice bath in a large bowl and set aside.

Peel the pears, halve them lengthwise, and core. Slice each half into 1/4-inch thick slices and set aside in a single layer on a plate.

In a medium saucepan combine 1 cup water, 1 cup granulated sugar, sliced fresh ginger, split vanilla bean (scraped seeds included) and lemon juice. Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer gently for 4 minutes to infuse flavors, then remove from heat and stir in kosher salt.

Let the poaching liquid cool for 5 minutes, then pour warm liquid over the pear slices until fully submerged. Cover and refrigerate for at least 4 hours or up to 24 hours to compress (the sugar + acidic liquid will draw liquid out of the pears and flavor them).

When ready to use, remove pear slices from liquid and pat lightly dry. Reserve poaching liquid for a drizzle or to moisten layers if desired.
Linzer Caramelized White Chocolate Mousse

Bloom the gelatin: sprinkle 1 tsp gelatin over 2 tbs cold water in a small bowl and let sit 5–10 minutes until spongy.

Caramelize the white chocolate: preheat oven to 300°F (150°C). Spread 10 oz chopped white chocolate in a single layer on a parchment-lined baking sheet and bake 10–15 minutes, stirring every 5 minutes, until chocolate develops a light golden caramel aroma and color. Watch closely to avoid burning. Remove and cool slightly.

Chop caramelized white chocolate if large. Place chocolate in a heatproof bowl with 2 tbs unsalted butter.

In a small saucepan, heat 1 cup heavy cream until it just starts to simmer. Pour hot cream over caramelized white chocolate and butter in two additions, stirring gently until smooth and glossy. If mixture is grainy, warm gently over a double boiler and stir until smooth. Allow mixture to cool to lukewarm.

Whisk egg yolks and 1 tbs sugar in a heatproof bowl. Temper the yolks: slowly pour 1/4 cup of the warm chocolate-cream mixture into yolks while whisking continuously, then pour yolk mixture back into the chocolate pot and stir over low heat 1–2 minutes until slightly thickened (do not scramble). Remove from heat.

Stir bloomed gelatin into the warm chocolate-yolk mixture until fully dissolved. Stir in ground ginger, ground cinnamon and sea salt. Let cool to room temperature but still fluid.

Whip 1.5 cups cold heavy cream to soft-medium peaks. Fold one-third of whipped cream into the chocolate base to loosen, then gently fold in remaining whipped cream in two additions until homogeneous and airy. Fold in linzer cookie crumbs if using, reserving a few tablespoons for garnish.

Chill mousse in refrigerator at least 2 hours to set slightly (mousse should still be scoopable for assembling trifles).
Linzer Caramelized White Chocolate (for garnish / drizzle)

Make a quick caramelized white chocolate drizzle: in a small nonstick skillet, melt 2 tbs sugar with 1 tsp water over medium heat until sugar dissolves and turns a light amber. Remove from heat and quickly stir in 2 oz chopped white chocolate and 1 tsp butter until smooth and glossy. If it seizes, warm gently and stir. Let cool to a pourable consistency.

Add a generous dollop (about 3 tbs) of the caramelized white chocolate mousse over the crumbs and smooth lightly.

Arrange a layer of compressed pear slices (3–4 thin slices) over the mousse.

Repeat layering with 1–2 tbs cookie crumbs, another 3 tbs mousse, and more pear slices, finishing with a small swirl of mousse on top.

Drizzle the cooled caramelized white chocolate sauce over the top of each trifle (about 1 tsp per serving).

Garnish with reserved cookie crumbs, toasted sliced almonds if using, a small piece of vanilla bean or a sprinkle of toasted almond pieces, and a mint leaf.

Chill assembled trifles 30 minutes to 1 hour before serving to allow flavors to marry. Serve chilled or at cool room temperature.
