Prepare Fruit

Wash and dry
Rinse all berries, grapes, and stone fruit under cool running water. Pat dry gently with paper towels or a clean kitchen towel. Dry fruit prevents dilution of the dressing and keeps nuts crisp.

Hull and quarter strawberries
Remove stems from strawberries and cut into halves or quarters depending on size so they are bite-sized.

Slice apples and pears
Core and thinly slice the apple and pear. To prevent browning briefly toss the slices with 1 teaspoon lemon juice immediately after slicing.

Slice stone fruit and melon
Pit and slice the peach or nectarine into wedges. If using melon, remove rind and seeds and cut into 1-inch cubes. Place each prepared fruit into separate small bowls to keep colors and textures distinct until plating.

Toast almonds
In a dry skillet over medium heat, toast the raw almonds, stirring frequently, until fragrant and lightly golden, about 4–6 minutes. Watch closely to avoid burning. Transfer to a plate to cool.

Make honey-lemon dressing
In a small bowl whisk together 2 tablespoons honey, 1 teaspoon fresh lemon juice, 1 teaspoon lemon zest, 1/8 teaspoon sea salt, and 1/4 teaspoon freshly ground black pepper until smooth. Taste and adjust honey or lemon to preference.

Arrange fruit
On a large serving platter or individual plates arrange the prepared fruit in visually appealing sections: group similar colors together (berries in one cluster, apple and pear slices fanned, stone fruit wedges, melon cubes, and grapes). Leave small gaps for cheese, nuts, and microgreens.

Add cheese and nuts
Spoon small dollops of goat cheese or ricotta onto the platter in 3–4 evenly spaced spots. Scatter the toasted almonds over the fruit and around the cheese.

Drizzle dressing and garnish
Lightly drizzle the honey-lemon dressing over the fruit—focus on berries, sliced fruit, and cheese, avoiding saturating delicate items. Sprinkle microgreens or mint leaves across the platter for a fresh look and additional flavor.
