    Prepare and grill sourdough

    Brush both sides of the sourdough slices lightly with melted butter or olive oil. Heat a grill pan or skillet over medium-high heat. Grill the bread 1–2 minutes per side, until golden brown with light char marks. Transfer to a cooling rack.

    When assembling, spread a small dollop (about 1 teaspoon) of avocado mousse on each toast, top with a spoonful of blue crab mixture, a dot of lemon gel, a small quenelle or 1/2 teaspoon of smoked trout roe, and finish with microgreens and a grind of black pepper.

Blue Crab Bites

    Gently pick through the crab meat to remove any cartilage or shell fragments. Keep large lumps intact where possible for texture.

    In a bowl combine the minced shallot, diced celery, chopped parsley, mayonnaise, Dijon mustard, lemon juice, Old Bay, and sea salt. Stir to combine until emulsified.

    Fold the crab meat into the dressing mixture gently so the lumps remain intact. Taste and adjust seasoning (more lemon or salt if needed). Refrigerate covered for 15–20 minutes to allow flavors to marry; remove 5 minutes before plating to come slightly to room temperature.

Avocado Mousse

    In a blender or food processor, combine the ripe avocado, cold heavy cream, lime juice, salt, and white pepper. Blend until completely smooth and whipped, about 30–45 seconds. Scrape down the sides and check texture; add an extra tablespoon of cream if a lighter, pipeable consistency is needed.

    Transfer the mousse to a piping bag or a small bowl and refrigerate until ready to assemble. Use within 2 hours for best color and texture.

Lemon Gel

    Option A (fast, lecithin — softer spherification): Whisk the powdered soy lecithin into the lemon juice thoroughly, then add the simple syrup. Use an immersion blender to aerate slightly until the mixture thickens into a glossy gel-like consistency. Chill briefly if needed; the result will be spoonable/droppable rather than a firm gel.

    Option B (firmer gel, agar-agar): In a small saucepan mix lemon juice with the simple syrup and sprinkle agar-agar over the surface. Let sit 5 minutes to hydrate. Heat gently, bring to a simmer while whisking for 1–2 minutes to activate the agar, then pour into a shallow dish. Chill until set (about 20–30 minutes). Once set, use a blender or fork to break into small pearls or cut into tiny cubes to dot the toasts.

    Taste and adjust: if too sharp, add a touch more syrup; if too sweet, add a few drops of lemon. Keep refrigerated until assembly.
