Prepare the Shrimp

In a mixing bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the beaten egg and milk. Dip each shrimp into the milk mixture, then dredge in the flour mixture until well-coated.

Fry the Shrimp

Heat the oil in a deep skillet over medium-high heat. Once hot, carefully add the coated shrimp in batches. Fry for about 2-3 minutes until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Po' Boy

Slice the French bread or rolls in half. Spread a generous amount of remoulade sauce on both sides. Layer with shredded lettuce, fried shrimp, and tomato slices.

Serve immediately while hot, with extra remoulade on the side if desired.
