Prepare the Smashed Potatoes

Boil the Yukon gold potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to pot. Add butter, milk, salt, and pepper. Mash until desired consistency is reached.

Grill the Redfish

Preheat the grill to medium-high heat. Drizzle the redfish fillets with olive oil and season with cajun seasoning, salt, and black pepper. Grill the fillets for about 4-5 minutes on each side or until cooked through and flaky.

Cook the Seasonal Vegetables

In a skillet, heat olive oil over medium heat. Add assorted seasonal vegetables and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.

Make the Cajun Cream Sauce

In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant. Stir in heavy cream, cajun seasoning, and lemon juice. Simmer for 5 minutes until slightly thickened. Stir in chopped parsley before serving.

Assemble the Dish

On each plate, place a portion of smashed potatoes, top with a grilled redfish fillet, and drizzle with cajun cream sauce. Serve with sautéed seasonal vegetables on the side.
