Crab
Carefully pick through the jumbo lump crab meat to remove any shells or cartilage. Gently break up any very large lumps into bite-sized pieces, keeping most lumps intact for texture.
In a medium bowl, toss the crab meat with the 2 tablespoons lemon juice, 1 tsp kosher salt and 1 tsp freshly ground black pepper. Let sit at room temperature for 5 minutes while preparing the pan (this brightens flavor and seasons the crab).

Place a large nonstick or stainless-steel skillet over medium heat. Add 1 tablespoon olive oil and 2 tablespoons unsalted butter. Once the butter is melted and foaming but not browned (about 1–2 minutes), add the minced shallot. Cook, stirring, until soft and translucent, about 2–3 minutes.
Add the 2 minced garlic cloves and the pinch of red pepper flakes. Sauté for 30–45 seconds until fragrant, taking care not to brown the garlic.
Cook crab
Increase heat to medium-high. Add the seasoned crab meat to the skillet in a single layer as much as possible. Spoon the remaining 1 tablespoon butter in small pieces over the crab. Allow the crab to cook undisturbed for 1 to 1.5 minutes to develop a slight sear on the underside.
Using a wide spatula, gently turn the crab pieces and cook another 30–60 seconds. The crab should be heated through but not rubbery; total active cooking time should be 2–3 minutes. Avoid over-stirring to preserve lump texture.
Deglaze & finish
Lower heat to medium. Pour in 2 tablespoons dry white wine (or chicken stock) to deglaze the pan, scraping up any flavorful bits with the spatula. Cook until the liquid reduces by about half, about 1 minute.
If using, stir in the 2 tablespoons heavy cream and heat gently just until warmed through and slightly thickened, about 30 seconds. Do not boil. Taste and adjust seasoning with a small pinch of salt and pepper if needed.
Remove the skillet from heat. Fold in the 2 tablespoons chopped parsley, 1 tablespoon chopped chives, and 1 teaspoon lemon zest (if using) to brighten the dish.
Serve
Transfer the sautéed jumbo lump crab meat to a warmed serving dish. Garnish with microgreens or extra parsley. Serve immediately with lemon wedges and crusty bread, toast points, or over pasta/rice as desired.
Leftovers: refrigerate in an airtight container for up to 2 days. Reheat gently in a skillet over low heat with a splash of stock or cream to prevent drying.
