Rinse the shucked oysters gently in cold water and drain in a colander. Place the oysters in a bowl with 2 cups buttermilk, 2 tbsp lemon juice, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Stir gently to coat, cover, and refrigerate for 20–30 minutes. This tenderizes the oysters and helps the breading adhere.

Breading

Set up a breading station with three shallow bowls: (1) dry mix — combine 1.5 cups all-purpose flour, 0.5 cup cornmeal, 1 cup panko breadcrumbs, 1 tsp Old Bay, 1 tsp smoked paprika, 0.5 tsp garlic powder, 0.5 tsp onion powder, 1 tsp fine salt and 0.5 tsp black pepper. Whisk to combine; (2) egg wash — whisk 2 large eggs with 1/2 cup whole milk until smooth; (3) reserved flour — a small bowl with 1/4 cup flour for a light dusting (optional for extra adhesion).

Remove oysters from the buttermilk one at a time, letting excess drip off. Lightly dust each oyster in the reserved flour, dip into the egg wash, then press into the dry mix so each oyster is fully coated. For an extra-crisp finish, double-dip: back into the egg wash and dry mix again. Place breaded oysters on a wire rack while you heat the oil; this prevents the breading from becoming soggy.

Frying

Pour about 1 liter of neutral frying oil into a deep pot or Dutch oven so there is at least 3–4 inches (7–10 cm) of oil. Attach a deep-fry thermometer and heat oil over medium-high heat to 350°F (175°C). Maintain temperature between 350–365°F (175–185°C) while frying.

Fry the oysters in small batches (6–8 pieces depending on pot size) so you don't overcrowd the oil. Carefully lower breaded oysters into the oil using a slotted spoon or spider. Fry 2–3 minutes, turning once, until golden brown and crisp. Internal oyster should be just cooked and opaque; do not overcook to avoid toughness.

Remove oysters to a paper towel–lined tray or wire rack and lightly season with a pinch of salt while hot. Let oil return to temperature between batches. Repeat until all oysters are fried.

Cocktail Sauce

Make the cocktail sauce

In a small bowl combine 1/2 cup ketchup, 2 tsp prepared horseradish (or to taste), 1 tsp Worcestershire sauce, 1 tsp fresh lemon juice and 1/4 tsp hot sauce if using. Taste and adjust horseradish or lemon for brightness. Chill until serving.

Tartar Sauce

Make the tartar sauce

In a separate small bowl whisk together 1/2 cup mayonnaise, 2 tbsp dill pickle relish, 1 tbsp finely chopped capers, 1 tsp lemon juice, 1 tbsp chopped fresh dill or parsley, 1/4 tsp black pepper and 1/4 tsp salt. Mix until combined and refrigerate until ready to serve.

Garnish & Serve

Arrange fried oysters on a platter lined with paper towels or on a wire rack. Garnish with chopped parsley and lemon wedges. Serve immediately with chilled cocktail and tartar sauces on the side for dipping.

Suggested serving: 4–6 oysters per person as an appetizer. Provide small forks or toothpicks for guests and a bowl for discarded shells or napkins.
