Demerara Syrup (optional - make ahead)

    Combine and heat

    Place 1 cup demerara sugar and 1/2 cup water in a small saucepan over low heat.

    Stir gently until the sugar is fully dissolved and the mixture is just coming to a simmer (do not boil). This typically takes 2–3 minutes.

    Remove from heat and let cool to room temperature. Transfer to a clean bottle or jar and refrigerate. Will keep up to 2 weeks.

Build the Daiquiri

    Chill glass

    If desired, chill a coupe or martini glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail.

    Measure ingredients

    Measure 2 oz aged rum, 1 oz fresh lime juice, and 1/2 oz demerara syrup. Use freshly squeezed lime juice for best flavor.

    Add to shaker

    Add the measured rum, lime juice, and demerara syrup into a cocktail shaker. Add enough ice to fill the shaker about 3/4 full (about 1 cup).

    Shake vigorously

    Seal the shaker and shake vigorously for 12–15 seconds until the outside of the shaker becomes very cold and slightly frosted. This both chills and dilutes the cocktail to proper balance.

    Prepare glass

    If you chilled your glass with ice water, discard the ice water and dry the glass.

    Double strain and serve

    Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer (or a julep strainer). This removes small ice shards and any lime pulp for a silky texture.

    Garnish

    Garnish with a lime wheel or a thin lime twist on the rim. Serve immediately.
