    Prepare glass and mint

    Choose a highball or Collins glass. Place 8–10 fresh mint leaves in the bottom of a mixing glass or the serving glass if you prefer fewer dishes.

    Muddle

    Add the 0.75 oz simple syrup and 1 oz fresh lime juice to the mint leaves. Gently muddle with a muddler or the back of a spoon 6–8 times to bruise the mint and release oils without shredding the leaves.

    Add rum and ice

    Pour 2 oz white rum into the glass. Fill the glass about three-quarters with crushed ice (approximately 1 cup).

    Mix and top

    Stir the mixture briefly (6–8 seconds) to combine syrup, lime, rum, and mint. Top with about 3 oz club soda, pouring gently to preserve carbonation.

    Garnish and serve

    Give the drink one gentle lift-and-stir to integrate the soda. Garnish with a lime wheel or wedge on the rim and a sprig of mint. Clap the mint sprig between your hands once to release aroma before placing it in the drink. Serve with a straw if desired.

Optional (batch preparation)

    In a pitcher, combine 8 oz white rum, 4 oz fresh lime juice, 3 oz simple syrup, and 40 mint leaves. Gently muddle the mint into the liquid to release oils without shredding. Add crushed ice to the pitcher or fill individual glasses with ice when serving.

    Stir well to combine, then pour into individual glasses about three-quarters full. Top each glass with 3 oz club soda (adjust to taste), garnish with lime and mint sprig, and serve immediately.
