Preheat your oven to 425°F (220°C).
Wash and chop the carrots, bell peppers, zucchini, and red onion into bite-sized pieces.
In a large bowl, combine the chopped vegetables with olive oil, salt, black pepper, and dried thyme. Toss until the vegetables are evenly coated.
