Soufflé Preparation

Prepare the Chocolate Mixture

Preheat your oven to 375°F (190°C). Melt the dark chocolate and unsalted butter together in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and allow to cool slightly.

Prepare Egg Mixture

In a separate bowl, whisk the egg yolks with half of the granulated sugar until pale and thick. Stir in the melted chocolate mixture, flour, vanilla extract, and salt until well combined.

Whip Egg Whites

In a clean bowl, whip the egg whites until soft peaks form. Gradually add the remaining sugar while continuing to whip until stiff peaks form.

Combine Mixtures

Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Bake the Soufflés

Butter and sugar four ramekins (about 6 oz each). Pour the soufflé mixture into the prepared ramekins until they are about three-quarters full. Bake in the preheated oven for 12-15 minutes or until risen and set on top.

Serve

Serve immediately with grand marnier cream and chocolate sauce drizzled over the top.
